Beans Holiday Style |

Ingredients:
1.5 lbs fresh
green beans
½ lb bacon, cut up while raw
1 red bell pepper, diced
½ red onion, diced
¼ cup brown sugar
Pinch of salt and pepper |

Serves 6 to 8
Method:
Blanch green beans. Remove from boiling water and place in ice cold
water to stop the cooking. Cut raw bacon before frying. When bacon is
done, drain off ¾ of the fat. Add the blanched green beans; sauté
1 minute. Add red bell pepper and red onion; sauté 1 minute.
Add brown sugar; stir. Add salt & pepper. Serve.
*Tastes great reheated
in the microwave! |

Sage
and Wild Rice Stuffing with Kahlua
(for a boneless 14 to 16 pound turkey) |

Ingredients:
1 pound loaf white bread
4 cups wild rice (cooked)
½ yellow onions (diced)
½ stalk celery (diced)
1 pound whole hog sausage
2 cups whole cranberries (cooked)
3 cloves garlic (minced)
1 shot Kahula
Fresh thyme
Fresh sage
1 to 2 cups turkey stock (to moisten)
2 eggs |

Method:
Brown sausage, celery and onion; drain off fat. Add thyme, sage and garlic;
sauté 2 minutes. Add cranberries and Kahlua; simmer one minute.
Remove and let cool. Add balance of ingredients. |

Ingredients:
8 to 10 Yukon Gold potatoes, diced large (you can peel them if youd
like)
1 pinch sea salt or kosher salt
Water to cover potatoes
2 Tbsp butter, approximately
½ cup milk
¼ tsp white pepper
½ tsp sea salt or kosher salt |

Method:
Bring the
potatoes, pinch of salt and water to a boil in a large sauce pot over
high heat. Boil until fork tender, approximately 10 minutes
of boiling. Drain water. Using a separate pot, heat milk and butter
together until butter is melted. While whipping potatoes add milk and
butter, add white pepper and ½ tsp sea salt. |

Ingredients:
1 lb. Pasta Farfalle, cooked & chilled
8 oz Bay Shrimp
3 only Roma Tomatoes, diced
1 only Green Bell Pepper, small diced
4 only Celery Ribs, small diced
½ cup Real Mayonnaise
1 small Red Onion, diced
½ Tbsp. Celery Seed
1 pinch Salt
1 pinch Pepper
Method:
Mix all ingredients.
Toss and chill at least 3 hours before serving.

Cauliflower Salad with Poppyseed Dressing |

|
Ingredients:
1 head Broccoli,
cut into small florets
1 head Cauliflower, cut into small florets
1 large Red Onion, diced small
1 cup Mayonnaise
½ cup Rice Wine Vinegar (white wine vinegar can be substituted)
½ cup Sugar
1 Tbsp. Poppy Seeds
Method:
Mix mayonnaise,
vinegar, sugar, and poppy seeds together in small bowl. Add vegetables
and toss. Chill at least 1 hour and serve. |
