Red Snapper serves 2
Ingredients:
6-7 oz Red Snapper Filets
1 Red Bell Pepper, Julienne
4oz Snow Peas, Julienne
8oz Bay Shrimp
2 Tbsp Fresh Dill, Minced
1/8 stick Unsalted butter, Cubed
½ cup White Wine
¼ tsp Sea Salt
1 Cup All Purpose Flour
¼ cup (approximately) Canola Oil
Method:
Begin with a large sauté pan on Medium High heat. Dust Filets with Flour. Add Oil to pan and sauté Filets approximately 3 minutes on each side (may need a little longer, depending on thickness) Filet will firm up and flake, when ready. Remove Filets from heat and set aside. Using the same sauté pan, add Bell Pepper, sauté one minute, add Snow Peas, Bay Shrimp, Sea Salt, Dill, and White Wine. Simmer for 30 seconds, stir in butter, remove from heat and place over fish.
Lime Grilled Mahi Mahi - Serves 6

Ingredients:
¼ Cup Lime Juice
2 Tbsp Olive Oil
1 Clove of Garlic, minced
1 Tbsp Soya Sauce
1 tsp Ginger, minced
1 tsp Dijon
¼ tsp Salt
¼ tsp Black Pepper
6 each, 7 oz Mahi Mahi Filet

Method:
Mix all ingredients (except the Mahi) together. Reserve 1/3 of Marinate. Add Fish to Marinate for 10 minutes. Baste fish while on grill.

Fish will be done when firm and flaky.
