First, two different ways to cook your wings...
1.Preheat oven to 350 degrees. Place wings on greased cookie sheet. Bake for 10 minutes. Using a spatula, turn wings over and bake for another 10 minutes. Turn wings over again and broil for approximately 5 minutes.

2.Using a "turkey type" deep fryer or Fry Daddy preheat to 350 degrees. Deep fry wings approximately 10 minutes. (caution: make sure as much moisture is removed from your wings before deep frying and do not overfill fryer)

     
     
        Teriyaki Chili Wings Serves 15        

Ingredients:
10lbs Cooked Chicken wings

1 thumb Ginger, minced
2 Tbsp Oil
1 Cup Teriyaki Glaze Kikkoman's Style
1 1/2 cups Durkees Type hot sauce

  Method:
Place a medium saucepan on medium high heat. Add oil and bloom ginger for 1 minute. Add teriyaki and chili sauces, whisk together. Simmer for 1 minute. Toss over wings and serve.
                                   
Buffalo Style Wings Serves 15

Ingredients:
10 lbs cooked chicken wings
2 tbsp oil
4 cloves garlic, minced
1 cup red wine,
Burgundy
2 cups Durkees Type hot sauce
1 tsp salt
1 tsp pepper
1/4 lb unsalted butter, cubed

Method:
PLace a medium saucepan over medium high heat. Add oil and bloom garlic for 1 minute. Add hot sauce and bring to a boil. Add salt & pepper. Whisk in butter. Remove from heat. Toss in wings and serve. (you can also place tossed wings back in oven for 5 minutes for a dryer wing)

Guacamole with Shrimp - Ceviche Style

Ingredients:
10 ripe Avocados
1 lb shrimp-
peeled, deveined, chopped & sauteed
4 roma tomatoes
2 tbsp fresh cilantro leaves, minced
1/4 cup real Mayonnaise
1 red onion, minced
1 tsp lime juice
1 tsp lemon juice
1 tsp jalapeno mince (optional)
Salt & Pepper
Your Favorite Corn Chips

  Method:
Mash Avocados. Then add the rest of your ingredients, and fold together. Salt and pepper to taste. Serve with corn chips.
