Outdoor Grilling- Salads
 
  Whole Meal Chicken Salad Serves at least 4          

Ingredients:
32 oz Skinless Chicken Breast
2 Tbsp Soy Sauce
1 Tbsp Canola Oil
1 15oz Can of Pineapple, chunky, reserve 1/2 of the juice
1 Green Bell Pepper, diced
1 Large Carrot, Julienned
4 Rib of Celery, diced (approx one Cup)
2 Cups Bean Sprouts
1 Cup Mayonnaise
1 Tbsp Dijon Mustard
1/4 tsp Ginger
Greens, Lettuce of your choice

  Method:
Marinate chicken in soy sauce and oil, Grill until done, chill and slice. Mix together pineapple juice, Mayonnaise, Dijon, and Ginger.
Toss all ingredients and server over greens.
 
       
                 
Bread Salad Serves 4

Ingredients:
1 Clove Garlic, minced
1 French or Italian Baguette, diced bite sized
1 Hot House Cucumber, peeled and de seeded
1 Med. Zucchini, diced
3 Roma Tomatoes, diced
1 Cup Fresh Basil leaves, chiffoned
1/4 Cup Olive Oil
3 Tbsp Balsamic
Fresh Black Pepper

Method:
Using a large bowl, toss bread with cucumber, zucchini, Roma Tomato, onion, and basil. Whisk together olive oil and Balsamic
and sprinkle over bread. Serve
