Shrimp or Chicken with Pumpkin,
Black Beans, and Tequila

Ingredients
32 large shrimp peeled and deveined
2 jalapenos deseeded and minced
3 cloves garlic minced
1 tbsp oil
1 pinch sea salt
2 shot tequila
1/4 stick unsalted butter
2 tbsp honey
1 tbsp celantro mince optional
4 oz. raw black beans
or one 16 oz. can rinsed
16 ounces diced pumpkins blanched al dente

Serves 4

Method:
Using large saute pan on high heat glaze with oil. Add shrimp, garlic, jalapenos. saute 2 min., add tequila. This will flame up a bit, so be ready! add black bean, cilantro and pumpkin. Stir one minute. Add honey. Stir in butter.
Plate and Serve

Pumpkin Fritters
Ingredients:

2 eggs, separated
½ cup Milk
1 1/3 cups all-purpose Flour
2 tsp. Baking Powder
1 cup Pumpkin Puree
¼ tsp. Cinnamon
¼ tsp. Ginger
¼ tsp. Nutmeg
5 Tbsp. Sugar

Method:
Whip egg whites to soft peaks. Set aside. Mix all other ingredients including egg yolks. Fold in egg whites. Drop by spoonfuls into hot oil. Deep fry. Sprinkle with powdered sugar.
