Pork Chops & Applesauce

Serves 4

Method:
Place medium sauce pot over medium high heat. Add all ingredients; simmer approximately 15 minutes until apples are tender.

Puree.

Applesauce
Ingredients
6 – 8 medium Green Apples, peeled and sliced
1 cup Brown Sugar
1 Tbsp Lemon Juice
½ Tbsp ground Cinnamon
4 each Cloves
2 to 3 cups Water

Seared Pork Loin Chops
with Sage and Apple Cream

Ingredients:

2 lbs Pork Loin
cut into chops
2 Tbsp Oil
Salt & Black Pepper
4 leaves fresh Sage
1 cup Chicken Broth
2 cups Apple Sauce
1 ½ cups Milk
or Heavy Cream
Corn Starch Slurry
to thicken




Method:

Heat a large sauté pan over high heat. Glaze with oil and sear pork chops after seasoning with salt and pepper approximately 2 minutes each side. Add chicken broth and apple sauce; simmer 1 minute; add cream or milk and simmer for approximately 4 minutes (sauce should reduce by 1/3). Thicken with corn starch slurry.
